Maple Blueberry Muffins

A morning staple, Maple Blueberry Muffins are fluffy, sweet and carry just a mild hint of the pure Brantview Farms Maple syrup used to create them. It's the perfect breakfast treat or snack on the go!

 

Ingredients:

2 cups sifted flour

2 tsp baking powder

1/2 tsp salt

1 egg, well beaten

1 cup milk

3 T shortening, melted 3/4 to 1 cup fresh blueberries

Maple Blueberry Muffins

Directions:

Sift the flour, baking powder and salt. Combine. In separate bowl, combine maple syrup, egg and milk. Add wet ingredients to the dry ingredients, mixing enough to moisten. Stir in melted shortening and fresh blueberries. Fill greased or lined muffin tins 2/3 full. Bake at 425 degrees for 20-30 minutes (until toothpick can be inserted and removed clean). Can also add 1/3 cup of crumbled bacon bits to this recipe for some extra flavor! Recipe from Northwestern PA Maple Syrup Producers Association, 1991
