Maple Sandwich Cookies

These cookies are large and oh so good! A soft sugar cookie with hints of maple flavor that come bursting through in the sweet creamy maple frosting that accompanies them, making the perfect sandwich! You can use any cookie cutter shape or size to make them just the way you want!

 

Cookie Ingredients:

2 1/2 cups flour

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup shortening

2 eggs


Frosting Ingredients:

1 T butter

2 cups powdered sugar

Directions:

Sift together flour, baking powder, baking soda, and salt. Set aside. Combine shortening, maple syrup and eggs. Stir wet ingredients into dry ingredients until combined. Chill for one hour. Roll the dough out and cut into preferred shapes. Bake for 8 minutes at 375 degrees. Cool cookies.

Bring maple syrup to a boil for 1 minute. Remove from heat and stir in butter and powdered sugar, continuously stirring until frosting is spreadable. Frosting thickens as it cools.

Spread between cookies to make sandwiches or simply coat the tops for single frosted cookies.
